Is there any video on how Matthew Mercer adapts stats of creatures for encounters for us newer DMs?
I think the solution is to increase the HP slightly and increase damage output but I have no idea how to even begin balancing it so that I dont make it unfair for my players.

You’re on the right track! It takes a little experience and finesse, but the mild HP bump and damage increase is the basis of better balancing while avoiding the slog

Can a ring of spell storing hold spells casted as rituals?

That sounds like the rules are vague and up to DM discretion. No, it means I don’t have a book with me to check! It most likely wouldn’t work, since rituals don’t require you to expend a slot, and I believe that is a requirement for the ring.

Also! A fun part of the session was hitting the raging barbarian 3 times with devil spines, and dealing the fire damage after he calculated resistance for the piercing damage. Just being polite to wait!

They are a criminal gang allied with the Nine Hells. Lots of tieflings, summoned devils, the infiltration wing of an empire ruled by priests of Asmodeus in my campaign.

Good ole Fell Court!! There are so many great things from Nerath. Is the Dwarven Stronghold gonna be Forge of Fury? One of my favorite memories in dnd is finding the map in sunless citadel and journeying to to the next adventure. Yes! That is exactly what happened, plus I added in some hooks to tie it into the Nentir Vale.
