Is there a difference between a "creature" and a "monster" when dealing with spells like resurrection?
It specifically says it can resurrect a creature, but I am wondering if that includes something lie a dragon.

See the Monster Manual: “A monster is defined as any creature that can be interacted with and potentially fought and killed. Even something as harmless as a frog or as benevolent as a Unicorn is a monster by this definition.” This confuses me because then you have "Hold Monster" and "Hold Person." The former works on "creatures" while the latter is "humanoids."
Wouldn't this mean Hold Monster works on humanoids as well?

Looking through the statblocks, it seems that about 50% of undead already preclude being paralyzed. Seems to me this exception was indeed accidental Yes, the relevant stat blocks already do the work.

I assume this logic safe to apply to other "classes" as well. The base class of a Water Elemental is an Elemental, but it's "affix" -or "subclass"- is Water.

Thus a Fire Elemental would not be affected by Destroy Fire, nor would an Earth Elemental by um, a Bulldozer… spell…?

Yeah no. With respect, this is far too ludicrous literalism for my tastes. A WATER elemental is by definition WATER, from the Elemental Plane of WATER, not water-appearing non-water substance. Either living water or spirit-animated water. Sometimes a cigar is just a cigar! I gave you our story intent. An elemental of whatever kind is an extraordinary creature associated with an element, but it is not that element. You're definitely free to alter that story in a campaign you run.

If a PC is in melee with an enemy, the enemy knocks them back, does that count as the enemy moving out of threat re: opportunity attacks? Can a PC make, say, a reaction to use a whip to grab onto the enemy who knocks PC off a cliff?

My interpretation is that attacks of opportunity are only triggered by active movement from the person moving on their turn. Forced movement, ie a push, pull or knockback does not apply – otherwise you could just take advantage of the AoO feature constantly and trivialise combat
