So, I'm going to go a bit of a different direction here, for someone who can't get actual terrain and draws their battlefields/dungeons. At what point do you start mapping? If I've got a party going to an abandoned city, do I map out the whole city, or specific rooms?

Great question! The entire city is a HUGE undertaking. I would instead consider “places of interest” within. Describe locations with words only, until one of these places is discovered or is revealed in a way where a map is truly necessary/helpful.
