can a Griffin raised from the dead still fly? Are you thinking of a specific means of raising it from the dead?
If we’re talking about casting raise dead on a griffon, then sure, it’s ability to fly wouldn’t be impaired. Any checks related to flying it had to make would suffer the usual penalties.

Yeah I was thinking if it were raised as an Undead, like a Zombie Griffin? That's going to be a question for whoever is designing the undead griffon to answer, that will be in the statblock.
Animate dead, the spell, can't affect a griffon, for instance.
